Chef tips
To ensure your falafel are light and airy, add half a teaspoon of bicarbonate of soda just before frying. Let the mixture chill in the fridge for ten minutes to settle the flavour and texture. For a healthier, low-fat option, bake the balls in a very hot oven with a light spray of olive oil. The children will love helping you with the fun task of rolling the mixture.
