Chef tips
To keep the meat juicy, sear the strips on a high heat in small batches. This prevents the beef from stewing in its own juices and ensures a deep, delicious flavour. For a classic family meal, serve the stroganoff over wide pasta or warm mashed potatoes. The children can help in the kitchen by cleaning the mushrooms with a damp kitchen paper before frying.
