Chef tips
To achieve an extra-soft texture, soak the dates in boiling water with baking soda for 10 minutes before blending. This softens the skins and makes the pudding perfectly moist. For a festive family treat, serve the pudding warm with a scoop of vanilla ice cream or cold whipped cream. For a dairy-free version, rich coconut cream in the toffee sauce is just as delicious.
