1Wash the oranges well and place them in a pot full of water.
2Bring to a boil over low heat and cook for an hour.
3After cooking, strain the pot and transfer the oranges to a blender.
4Grind until a smooth puree is obtained.
5To prepare the pistachios, grind them in a coffee grinder or food processor until the pistachios are finely ground.
6Heat the oven to 175 degrees Celsius.
7Grease a cake pan with a removable bottom to prevent sticking.
8In a bowl, mix the orange pulp, egg whites, honey, ground pistachios, almond flour, vanilla extract and baking soda until the mixture is uniform.
9Pour the mixture into the greased pan.
10Bake for an hour, cover with foil if the top is browning too quickly.
11Check if the cake is ready by pushing a toothpick; He should come out clean.
12While the cake is baking, make the frosting by combining 120ml of orange juice with 30ml of honey in a small saucepan. Bring to a boil, then reduce to low heat until the liquid is reduced by half.
13After the cake is baked, spread the frosting on the cake and decorate with slices of dried orange.
14Run a knife around the edges to loosen the cake before removing the outer ring.
