Chef tips
To ensure the lamb is beautifully tender, try searing it in a frying pan before baking. This locks in the juices and adds a deep flavour that works wonderfully with the rice and sauce. For a kosher alternative, use unsweetened soya-based yoghurt with a splash of lemon juice. The children can join in by mixing the batter and spreading it over the meat to create a lovely golden crust.
