Chicken Grilled in Adobo Marinade

1Wipe the chicken and add salt. Place in a large bowl.
2Lightly toast the guajio peppers in a hot pan for a few seconds, turning once to prevent burning.
3Soak the roasted peppers in a bowl of hot water for 25 minutes until they soften.
4Filter the water and place the soft peppers in a blender. Add the seasoning, garlic powder, oregano, cumin, pepper, lime juice, water and salt.
5Blend until the mixture is smooth, about a minute. Strain the sauce if necessary to remove pepper skins.
6Pour the sauce over the chicken, making sure all the pieces are well coated. Cover with cling film and soak in the fridge for at least an hour.
7Before grilling, drain the chicken (save the remaining marinade) and let it come to room temperature. Brush with vegetable oil to prevent sticking.
8Roast on a preheated grill, brush with oil. Turn every 5 minutes, and brush with the marinade we saved until the chicken is completely cooked, about 25 minutes.

1 tsp whole seasoning or 1/2 tsp garlic powder and 1 tsp onion powder
1 tsp Mexican oregano
1 tsp cumin
1 tsp ground black pepper
1 tsp garlic powder
60ml lime juice
120ml water
