1Soak the sabaja seeds in water for 20 to 30 minutes until they swell.
2Filter and set aside.
3Prepare the Faluda noodles according to the package instructions, soak or cook as needed, then cool completely.
4Roughly chop the pistachios and set aside.
5In a small pot, combine the vegetable milk and sugar, add chopped pistachios and saffron threads.
6Heat gently, stirring until the sugar dissolves, but do not cook.
7After the milk has absorbed the flavors, remove from the stove and allow to cool completely; Refrigerate if adding later.
8In a serving glass, arrange layers of soaked sabja seeds, paluda noodles, ice cubes and saffron milk.
9Repeat the layers and place a scoop of ice cream on top.
10Garnish with pistachios, almonds or cashews and serve immediately.

5 to 6 sliced or chopped cashews (or almonds)
2 to 3 candied cherries (optional)
