1In a large stainless steel pot, combine thick salt, 150 grams of sugar and 3 tablespoons of water. Heat on medium-high heat, turning occasionally until the sugar melts, about 1 minute.
2Continue to cook, stirring gently with a heat-resistant spatula, until the mixture changes color to a light honey color, about 5 minutes.
3Add the remaining butter and sugar, reduce the heat to medium, and add the vanilla puree and pepper. Cook until the sauce is bubbling and deep in color, about 20 seconds.
4Add the peaches cut side down and sprinkle with nuts if you chose to use. Shake rum on top.
5To ignite, gently tilt the pot to ignite the rum, or use a long lighter if using an electric stove. Cook until the flames go out, about 45 seconds.
6Turn the peaches over and serve with scoops of vanilla ice cream, sprinkled with coarse sea salt.
