1Preheat the oven to 180°C and line a large baking tray with parchment paper.
2Tear the panettone into small pieces and place them in a bowl.
3In another bowl, combine the sugar, eggs, salt, and honey.
4Whisk with an electric mixer until pale and frothy.
5Add the panettone pieces and mix well.
6Combine the baking powder with the flour and gradually add it to the panettone mixture, mixing with your hands to form a dough.
7Shape the dough into a long log and flatten the top (about 27 cm long and 2 cm thick).
8Brush the log lightly with cold water and bake for 30 minutes.
9Remove from the oven and let cool for 5-10 minutes.
10Reduce the oven temperature to 130°C.
11Cut the log diagonally into biscotti and place them back on the tray.
12Bake for an additional 40 minutes (30 minutes for softer biscotti).
13Once baked, transfer to a cooling rack to cool completely.
