2Reserve 120 ml of the cooking water, then filter.
3Meanwhile, cut the zucchini into small cubes and finely chop the onion.
4In a large pan, heat 2 tablespoons of classic virgin olive oil over medium heat.
5Add the chopped onion and the zucchini cubes, lightly season with salt, and cook for 5-7 minutes, stirring frequently, until the zucchini is soft and lightly golden.
6Transfer the zucchini mixture to the blender with the basil leaves and a third of the amount of burrata (about 70 grams).
7Mix until the mixture is smooth and creamy, adding a few tablespoons of the pasta water if needed.
8Taste and adjust the seasoning.
9Return the pasta to the pot, add the zucchini sauce and mix until the pasta is evenly coated, adding more water if necessary.
10Tear the rest of the burrata on top, drizzle with olive oil, sprinkle with fresh basil leaves, and serve immediately.
