Chef tips
To keep your borscht looking vibrant and deep red, add a tablespoon of lemon juice or vinegar to the beets while sautéing; the acidity locks in the color and prevents it from turning brown during cooking. For a lighter twist, swap the beef for chicken pieces or skip the meat entirely for a hearty vegetarian meal. Serve with a thick slice of rye bread and fresh chopped dill for a burst of aroma and freshness.
