What to know about Gluten-Free Ice Cream Cones

Ultra-thin, extra-crisp ice cream cones with a delicate caramel aroma—an entertaining and summer-dessert classic. Gluten-free yet dairy, the batter bakes paper-thin and must be rolled quickly while hot; an optional stabilizer boosts flexibility and helps prevent cracking.

  • 5When the pan is hot, pour about 45 ml of the mixture into the pan, and gently move it to spread it into a circle about 12.5 cm in diameter.
  • 6Cook until the underside sets and begins to brown, about 2 minutes. Flip and press with a spatula to brown evenly for another minute.
  • 7When the cone is golden on one side, remove from the pan and just before the cone cools, roll it into a cone shape, and press the bottom to close.
  • 8Place on a cooling rack. Repeat with the rest of the mixture.
  • 9To add stability, place a small marshmallow or two in the bottom of each cone to catch the liquids from the melted ice cream.
  • 10In a dry environment, the cones will stay crisp for several days at room temperature or up to 3 days in a sealed jar.
