1Add the chicken thighs with chopped garlic, grated ginger, brown sugar, paprika, hot pepper flakes, black pepper, cumin, nutmeg and salt to a bowl and mix until evenly combined.
2Mix well, cover with cling film and place in the fridge for an hour or overnight.
3Heat the oven to 200 degrees Celsius.
4Lightly grease a baking tray with oil.
5Arrange the chicken legs in the pan, leaving spaces between them.
6Bake for 20 minutes, turn the shanks and bake for another 10 to 15 minutes, or; it is ready when they are caramelised and completely cooked.
7To finish, serve hot.
