1Preheat the oven to 175°C and lightly grease a 23x33 cm baking pan.
2In a bowl, mix all the dry ingredients: gluten-free flour, sugar, cocoa powder, baking soda, baking powder, gelatin, cinnamon and salt.
3mix well.
4Add the wet ingredients: flax eggs, melted coconut oil, vanilla extract and vegetable milk. Mix until the mixture is thick and uniform.
5Fold in the grated zucchini until the mixture is uniform.
6Pour into the baking dish and sprinkle chopped vegetable chocolate on top.
7Bake for 35-40 minutes, or until the edges are set and the center springs back when touched.
8Allow to cool before cutting and store in an airtight container at room temperature for 2-3 days.
