Soft Italian Almond Cookies with Orange Zest

1. 1In a bowl, whip the egg whites with the almond and orange extracts until foamy.
2. 2In a separate bowl, mix the ground almonds, sugar and orange zest.
3. 3Combine the egg white mixture with the dry ingredients and mix until the dough forms.
4. 4Knead the dough into a ball, making sure all the ingredients are well mixed.
5. 5Wrap the dough in cling film and refrigerate for at least 4 hours or overnight.
6. 

   6Heat the oven to 160°C and place baking paper on a tray.
7. 7Form the frozen dough into a roll and cut into 1.5 cm, and roll into balls.
8. 8Press and shape the balls into ovals and place on the prepared pan.
9. 9Sprinkle with powdered sugar and bake for 20 minutes.
10. 10Let them cool completely before serving.

• 250 grams ground almonds (gluten-free)
• 2 large egg whites
• 150 grams white sugar
• 1 teaspoon almond extract (gluten-free)
• 1 teaspoon orange extract (gluten-free)
• Zest of one orange
