1Heat the oven to 180°C. Remove the seeds from the red peppers, wash and place on a greased baking sheet. Spray a little oil and simmer for about 20 minutes until the peppers brown a little.
2While the peppers are baking, cook the egg whites, peel and set aside. Wash the carob beans.
3Chop the reserved onion and mix it with the roasted peppers in a blender until the mixture is coarse.
4Heat a pan over medium heat until hot. Add the vegetable oil and heat for about 5 minutes, and make sure the pot is dry to avoid splashing.
5Add the chopped onion to the hot oil and mix. Then add the pepper mixture and the carob beans.
6Be careful as the mixture may splatter. Add the chili flakes and cook for another 5 minutes.
7Add the egg whites and the ground egg, mix gently into the stew. Cook for another 15 minutes on medium heat, stirring occasionally to prevent burning.
8Season with salt and seasoning powder to taste. Add the chopped meat and mix gently.
9Cook another 7-12 minutes until the oil floats on the surface of the dish. Adjust the seasoning as needed.
10Serve the opada stew with soft opada rice or plain white rice.
