1Prepare all the ingredients. To get a better taste, chill the fish for 2 hours or overnight in the refrigerator.
2To make dashi kombu, soak the kombu in 180 ml of water to release the flavor.
3Sprinkle coarse salt on both sides of the fish pieces and let stand for 10-15 minutes to absorb moisture.
4Rub the skin of the gobo cut thinly, soak in water for 5-10 minutes, then filter.
5Peel and chop the ginger.
6Boil the fish pieces in boiling water for 15-20 seconds, then cool in cold water and gently pat dry.
7In a saucepan, combine the soaked kombu dashi and sake. Place the pieces of fish skin side up and bring to a gentle boil.
8Add the gobo and remove any foam. Remove the kombu and add the ginger slices, mirin and sugar, mix gently.
9Cook on medium-low heat with a lid for 5 minutes. Add soy sauce and cook for another 5 minutes, sprinkling over the fish.
10Let the fish cool in the sauce before serving, and reheat gently if needed.
